Do you have time to make yourself three healthy meals a day every day? Do you end up eating whatever you have around or ordering food regularly because you don’t have time to cook for yourself?

Meal prepping is the easiest way to solve your healthy eating struggles. For many of us, it’s much easier to take one or two evenings to cook for the week than it is to make daily meals.

New to meal prepping? Here are a few tips and a sample meal prep for the week to get you started!

TIPS

  • Keep your meals simple and easy to reheat. Stick to a few veggies, one protein that reheats well and a grain like rice or quinoa unless you’re avoiding carbs.
  • Slightly undercook your food, especially your veggies because you’ll be reheating them and don’t want things to get mushy.
  • Some people keep their food plain and add hot sauce, but you can also make a sauce that you love to top your food with each week. You can also buy pre-made sauces like the Vegan Kale Pesto or Romesco Dip from Trader Joes to add a little extra flavor to your food.

SAMPLE MEAL PREP

Breakfast:

Overnight oats – these are super easy to grab and go. Make 2-3 servings at a time and change up your toppings to add variety. Baked apples make overnight oats feel like dessert and don’t take much time.

Make your first batch Monday night, and a second batch on Wednesday on Thursday.

Lunch:

  • Buddha Bowl with baked tofu. These reheat well and can even be eaten cold.
  • Spicy sriracha peanut sauce makes these bowls craveable – you’ll be excited when lunchtime rolls around!
  • They’re filling enough to give you the extra boost you need to push through the rest of the day.

Dinner:

  • I like to keep dinner simple with soups or salads that are easy to digest so your body can rest when it’s time for bed.
  • Mason jar salads keep well in the fridge for a few days. Add your dressing when it’s time for dinner. Or try a minestrone soup packed with beans for protein.

Meal prepping makes it easy to eat healthy meals, saves you time, and saves money too! Change up your weekly meals to prevent boredom. Happy meal prepping!
