Cayenne Chicken Stick & Black Bean Salsa


cayenne pepper 1 tbsp
smoked paprika 2 tbsps
ground cumin 1 tbsp
garlic cloves, crushed 2
olive oil 2 tbsps
chicken thighs, cubed 2 lbs
limes, halved 2
thick Greek-style yoghurt 1 cup
Sriracha 2 tbsps

Black Bean Salsa

black beans, rinsed, drained 1 can
very kale, finely shredded 1.5 cups
cilantro, loosely chopped 1 bunch
jalapeno, thinly sliced 1
red onion, finely chopped 1
extra virgin olive oil (EVOO) 1/4 cup

  1. In a bowl combine cayenne, paprika, cumin, garlic, and oil. Add chicken in chicken and mix well. Make 8 chicken skewers and marinate in fridge at least 1 hour.
  2. Fire up the barbecue, chargrill pan, or oven on high, and grill skewers, 4 minutes on each side.
  3. In a bowl add in salsa ingredients, adding juice of the grilled limes
  4. Serve chicken with salsa and a side salad of greens
