Let’s Go Bowl-ing


Brown rice 1/2 cup
Baby Spinach leaves, prewashed 1/2 cup
small chicken breast, seasoned with salt, pepper, cumin, cooked, and cubed 1
EVOO 1 tbsp
salsa 3 tbsp
shredded cheddar cheese 2 tbsp
black olive slices 3 tbsp
cherry tomatoes 5
Red and green pepper slices
Cilantro, washed and coarsely chopped

Bowls are a great way to keep it simple yet healthy, andvery easy to DIY. Here’s a simple one to start with:

In a deep bowl place brown rice, cover with spinach, drizzle the EVOO, add chicken, cherry tomatoes, green and red pepper, olives, cheddar cheese. All components can be made ahead the night before but make sure to keep separate.
