Shrimp Stir Fried Rice


sesame oil 2 tbsps
olive oil 2 tbsps
uncooked medium shrimp, peeled and deveined 1 lb
frozen peas and carrots 1 cup
frozen corn 1/2 cup
cloves garlic, finely minced 2
large eggs, lightly beaten 3
cooked rice 4 cups
thinly sliced green onions 3 tbsps
low-sodium soy sauce 3 tbsps
Salt and pepper to taste

This is great to make when you have rice leftovers. Read on to learn how to make this delicious dish.

  1. Add oil to a large nonstick frying pan or wok on medium-high heat. Add shrimp and cook until they are bright pink on the outside and the meat is opaque, about 3 minutes, flipping halfway through. Remove shrimp with a slotted spoon and plate shrimp.
  2. Next, cook peas, carrots, and corn about 2 minutes. Add garlic and cook for another minute and stir for 1 minute. Move
  3. Move vegetables to one side of the frying pan, pour eggs in the empty side, and scramble them, about 3 to 4 minutes.
  4. Add in shrimp, rice, and green onions, drizzle in soy sauce, add salt and pepper, and stir to combine. Cook until shrimp is reheated through, about 2 minutes.
